Reserve the remaining cordial you can use for brunch beverages, sweets, or to make additional servings of the drink.

Serves 10 servings
For the Clementine Cordial (produces 750ml)
300ml fresh clementine juice
200ml fresh lemon juice
500g granulated sugar
For the Cocktail (makes 850ml, to serve 10)
400ml premium vodka
100ml London dry gin
150ml peach schnapps
200ml clementine cordial (as made above)
Whole cranberries, as a garnish
Mandarin essential oil, to finish
Method
To prepare the Citrus Syrup: Place the listed items inside a pot, bring to a light boil, mixing until the sugar dissolves. Then, remove from the heat and let it to reach room temperature completely. Decant into an sealable bottle, close it and refrigerate it in the refrigerator, it can be stored for up to one month.
Preparing the Premix: Pour the specified spirits and syrup in a sizeable container, allow it to infuse for an hour, then strain best through muslin, making it perfectly clear.
When ready to serve: Pour 85ml of the premix to a stirring glass filled with ice, and stir gently for about 60 seconds to cool it down. Pour into an cold coupe glass or similar, top with some cranberries and finish with a light spray with the mandarin essence over the drink.
